Introduction
β-Apo-8'-Carotenal can be found in citrus fruits and vegetables such as oranges and spinach. Apart from β-Carotene, it is the only carotenoid that plays a significant role as a precursor of Vitamin A. β-Apo-8'-Carotenal with its vivid reddish color shade is an excellent alternative to artificial colors like Allura Red or Ponceau 4R.
